Well, you have loads of options when buying a reciever but I'll just give you a few specs to look for:

SNR - Signal to Noise Ratio - this is the measure of how "clean" the sound is, the higher the value, the less background "white" noise can be heard

SPL - This is a measure of the maximum sound volume that can be produced. Usually it is described from 1m and with the units dB (Decibels). dB is a logarithmic unit so something with an SPL of 100dB is x10 louder than something with 97dB.

dB references:

Quiet office: 43dB
Motorway traffic: 70dB
Pneumatic Drill: 80dB
Shotgun: 140dB
Formula 1 car: 160dB
M1 Garand Rifle: 170dB

Frequency Response - this defines the range of sounds the system can pick up (which can also be outputted to the Amplifier). You don't have to worry about this much when looking at respected manufacturers but just as reference:

Lower limit: <35Hz
Upper limit: 20kHz (the upper limit of human hearing)

A few manufacturers to look out for:

Marantz
NAD
Harmon Kardon

Amoungst others. Italia can probably give some more input...

Over to you, Italia mate!

Hey scott, is there some sort of instrument that can tell you how many dB your system is?

You can buy an SPL meter. Most audio specialty shops have them.

Well said.

They are very sensitive though, you have to make sure you follow guidelines or the instruction manual to get an accurate and comparable reading.

My system's maximum is around 124dB. Very loud indeed.
