If you buy an HDTV will it show High Def quality by itself on the 360 or do you need your cable provider to send HD signal to get High Def?

you need to go into the console settings on your xbox 360, and select 480i,1080i etc.

does the 360 run at 1080i because I thought that it only ran at 720p

yes xbox360 runs in 1080i and 720p and on xbox.com it says that it will put your dvds in 720p or1080i.

There is a difference between a HDTV ready TV and a HDTV with a HD Tuner built into it.

The XBOX 360 in this case becomes a tuner meaning it will produce whatever High Definition single you tell it to 720p, 1080, 1080p it will also depend on what the game developers designed the game to display. You will set it(the 360) depending on what resolution your TV can produce and upon what the game developers have created. Microsoft has stated that nothing on the 360 will be lower than 720p and many TV’s up-convert that signal to a 1080i.

FYI
If you want to watch TV in high def, your cable/satellite provider has to broadcast a signal in HD or it won’t really matter what kind of TV you have.
Here is an example of what I mean. My local cable provider Time Warner gives me a HD box for digital cable then I have to pay an additional charge to watch HD programming. It is ran to my HD ready TV and I use the digital cable box as my HD tuner.
The 360 will be just like your cable provider producing everything in HD.
